Gluten Free Strawberry Surprise

Directions:

Place 3/4 cup of butter into a 9x13 cake pan and place it into the oven.

Turn the oven on to 400 degrees. While the oven heats and the butter melts start crushing up those lovely gluten free pretzels until they are just small bits and pieces.

When the butter is melted carefully remove the pan from the oven with an oven mitt

Stir the pretzels and 2 tablespoons of sugar into the pan until evenly coated and mixed. Press evenly across bottom of pan. Return pan to oven and bake for 8 minutes. Remove immediately and let cool.

While the crust cools in a mixing bowl combine 1 8oz package of cream cheese, 1 cup of granulated sugar, and cream with a mixer. I was never the strong type who could do this by hand. Fold in by hand 12 oz of Cool Whip. Spread over the first layer, and place in the fridge.

In a large mixing bowl add 1 large box or 2 small boxes of strawberry JELLO and stir in 2 cups of boiling water until gelatin is dissolved. Add in 2 10oz bags of frozen strawberries and let the JELLO thicken slightly so that the strawberries don't fall to the bottom of the layer. Spread over cream cheese layer.

Refrigerate for 2 hours before serving

Slice and enjoy another gluten free dessert that you can share with your friends and family because food was meant to be shared.
