Every Thanksgiving I plague my family with my favorite recipe for such occassions and that would be Broccoli casserole, but since it needed to be gluten free that meant that my favorite cream of mushroom soup in a can had to go. So I came up with my own easy to make recipe that actually is way healthier too since there are no preservatives.
What you will need to replace one can of cream of mushroom soup in your recipe:
2 TBSP butter
1 cup of gf chicken broth
1 cup of milk
1 box of fresh mushrooms diced
1 TBSP Corn Starch
salt and pepper to taste
Into a skillet place the butter and diced mushrooms. Sautee for a few minutes till heated through. Add the chicken broth, milk and corn starch stir with a whisk to blend and heat until thick. Remove from heat and add salt and pepper to taste. That's it you can either use this immediately in your favorite recipe or freeze it for later use. If you freeze it be sure to mark the container with the name and date of the contents or you risk loosing it forever.
