Gluten Free Strawberry Surprise!

Strawberries, Jello, Cream Cheese and Surprise!

Gluten Free Pretzels.

I was so excited when Snyders came out with the best ever gluten free pretzel. You honestly can't tell the difference between the GF and regular pretzels. I wonder how they make something so good that's gluten free, but however they did it I am so excited because it allowed me to fix one of my favorite hot weather desserts.

This cool refreshing treat is so yummy that I don't like to make it too often because I'll eat the entire thing in a couple of days.

3/4 cup of butter

2 cups of crushed gluten free pretzels (I recommend Snyders)

2 TBSP of sugar

1 8oz package of cream cheese at room temperature

1 cup of sugar

12 oz of Cool Whip

1 large or 2 small boxes of strawberry JELLO

2 Cups of boiling water

2 10 oz packages of frozen strawberries (do not use fresh you need the cold for this recipe)

Place 3/4 cup of butter into a 9x13 cake pan and place it into the oven. Turn the oven on to 400 degrees. While the oven heats and the butter melts start crushing up those lovely gluten free pretzels until they are just small bits and pieces. You'll need 2 cups of crushed pretzels. When the butter is melted carefully remove the pan from the oven with an oven mitt (The pan will be hot! Unless you forgot to turn on the oven, but then if you didn't turn on the oven the butter wouldn't be melted would it ... so um, yeah use an oven mitt for this part). Stir the pretzels and 2 tablespoons of sugar into the pan until evenly coated and mixed. Press evenly across bottom of pan. Return pan to oven and bake for 8 minutes. Remove immediately and let cool.

I speed up the cooling process, because I'm impatient like that, by placing it in the fridge.

While the crust cools in a mixing bowl combine 1 8oz package of cream cheese, 1 cup of granulated sugar, and cream with a mixer. I was never the strong type who could do this by hand. Fold in by hand 12 oz of Cool Whip. Spread over the first layer, and place in the fridge.

In a large mixing bowl add 1 large box or 2 small boxes of strawberry JELLO and stir in 2 cups of boiling water until gelatin is dissolved. Add in 2 10oz bags of frozen strawberries and let the JELLO thicken slightly so that the strawberries don't fall to the bottom of the layer. Spread over cream cheese layer.

Refrigerate for 2 hours before serving

Slice and enjoy another gluten free dessert that you can share with your friends and family because food was meant to be shared.
